4 Cozy One-Pot Meal Recipes Perfect for a Logan Winter Night-image

The cold months in Logan call for maximum warmth and minimum fuss. After a long day, the last thing any Strata resident wants is a massive cleanup, which is why the  one-pot meal  is the MVP (Most Valuable Pot) of apartment cooking.   These four recipes are designed for speed, simple ingredients, and, most importantly, easy cleanup—because a cozy winter night should be spent relaxing on your couch, not scrubbing dishes! 1. Creamy Tomato Pasta   This dish cooks the pasta right in the sauce, eliminating the need for a separate boiling pot and ensuring the perfect, starchy, creamy texture.   Ingredients: 1 large onion, chopped 2 cloves garlic, minced 1 (28 oz) can crushed tomatoes 4 cups chicken or vegetable broth 1/2 teaspoon dried basil 1/2 teaspoon dried oregano 8 oz dried pasta (penne, rotini, or spaghetti broken in half) 1/2 cup grated Parmesan cheese Salt and pepper to taste Optional:  Handful of fresh spinach Instructions: In a large saucepan or Dutch oven, sauté the onion and garlic in a drizzle of olive oil until softened. Pour in the crushed tomatoes and broth. Stir in the basil, oregano, salt, and pepper. Bring the mixture to a boil. Add the dried pasta. Reduce the heat to a simmer, cover, and cook for 15-20 minutes, or until the pasta is al dente and most of the liquid is absorbed. Stir occasionally to prevent sticking. Remove from heat. Stir in the Parmesan cheese until melted and creamy. Optional:  Stir in a handful of fresh spinach until wilted. Serve immediately. 2. Sausage and Veggie Sheet Pan Dinner   The ultimate no-scrub meal. Line your sheet pan with foil or parchment paper for lightning-fast cleanup.   Ingredients: 1 lb smoked sausage or pre-cooked chicken sausage, sliced 1 medium sweet potato, cubed 1 head of broccoli, cut into florets 1 red onion, roughly chopped 2 tablespoons olive oil 1 teaspoon Italian seasoning 1/2 teaspoon garlic powder Salt and pepper to taste Instructions: Preheat your oven to 400°F. Line a large baking sheet with parchment paper or aluminum foil. In a large bowl, combine the sliced sausage, cubed sweet potato, broccoli florets, and red onion. Drizzle the mixture with olive oil, then sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss well to coat evenly. Spread the mixture in a single layer on the prepared baking sheet. Roast for 20-25 minutes, or until the sweet potatoes are tender and the sausage is slightly caramelized. 3. Hearty Three-Bean Chili   A chili is perfect for cold nights, great for using apartment pantry staples, and tastes even better as leftovers.   Ingredients: 1 (15 oz) can black beans, rinsed and drained 1 (15 oz) can kidney beans, rinsed and drained 1 (15 oz) can pinto beans, rinsed and drained 1 (28 oz) can crushed tomatoes 1 (15 oz) can diced tomatoes (undrained) 3 cups vegetable broth 2 tablespoons chili powder 1 tablespoon cumin 1 teaspoon smoked paprika 1 teaspoon minced garlic (from a jar works great) Salt and pepper to taste Toppings:  Shredded cheese, sour cream, green onions Instructions: In a large soup pot or slow cooker insert, combine all the beans (black, kidney, and pinto), crushed tomatoes, diced tomatoes, and vegetable broth. Stir in the chili powder, cumin, smoked paprika, minced garlic, salt, and pepper. Stovetop:  Bring the mixture to a boil, then reduce heat to low, cover, and simmer for at least 30 minutes (or up to 2 hours) to allow the flavors to blend. Stir occasionally. Slow Cooker:  Cook on Low for 6-8 hours or on High for 3-4 hours. Ladle into bowls and top with your favorite additions. 4. Lemon-Garlic Salmon and Asparagus Foil Packs   This recipe uses a "packet" instead of a pot, meaning zero dishwashing. The foil locks in steam, leaving you with tender fish and perfectly cooked veggies.   Ingredients: 2 salmon fillets (about 4–6 oz each) 1 bunch of fresh asparagus, trimmed 1 tablespoon olive oil 1 teaspoon minced garlic 1 lemon, thinly sliced Salt, pepper, and dried dill (optional) to taste Instructions: Preheat your oven to 400°F. Tear off two large pieces of heavy-duty aluminum foil (about 12x18 inches each). Divide the asparagus evenly between the two foil sheets, placing them in the center. Place one salmon fillet on top of the asparagus on each sheet. Drizzle 1/2 tablespoon of olive oil and 1/2 teaspoon of minced garlic over each salmon fillet and sprinkle with salt, pepper, and dill. Place two to three thin lemon slices on top of each salmon fillet. Fold the long sides of the foil together, then fold up the edges to seal the packet tightly, leaving a little air space inside for the steam. Place the packets on a baking sheet (optional, but makes transport easier) and bake for 15-20 minutes, or until the salmon is fully cooked and flakes easily. While the name suggests a hug, remember that every dog is unique—the best way to celebrate is by showing love in a way your pup enjoys most!   Here are four ways to celebrate National Hug Your Puppy Day (and the whole month) in your Strata apartment and around Logan: 1. Prioritize The Perfect Petting Session   While a big bear hug might feel great to you, some pups prefer a different kind of cuddle. Always read your dog's body language . If your pup is tense, leans away, or seems uncomfortable when hugged, try these loving alternatives instead: The Gentle Scratch:  Most dogs melt for a good scratch behind the ears, at the base of the tail, or on their chest.
